After two decades spent sharpening his knives in kitchens across Kyoto, Tokyo and Singapore, Kyoto-born chef Kazuhiro Hamamoto opened this 12-seat sushi-Kappo restaurant in 2021 as a place to showcase his culinary vision. Designed to reflect Hamamoto’s belief that food replenishes the soul and that we are all united in the spirit of harmony and connection, the single lunch and dinner sittings take place at the brushed hinoki counter – the only curved sushi counter in Singapore. The austerity of the dining room was a conscious decision, allowing the focus to remain exclusively on the plates: nigiri, spiny lobster with uni, hokkaido hairy crab shabu, grilled eel… the list goes on. Taking seasonality as a starting point, the chef makes it his business to understand the life cycle of any given ingredient, maximising its flavour by using it in a dish only at the optimum time. Reservations are notoriously difficult to come by, but worth waiting for.
