New Indian restaurants are not uncommon in Singapore, but Revolver has been setting foodie hearts ablaze since it opened in 2021 with its woodfire concept, sexy Tras Street dining room (complete with chef’s table) and bold flavour combinations. Menus showcase premium seasonal ingredients, either cooked over the custom-built tawa (iron grill), in the hand-built tandoori oven or over an open fire. It’s hardly surprising, then, that the sunken, open kitchen distracts from the much-lauded silver-and-black dining room, courtesy of Matthew Shang Design Office. Choose a la carte, or one of many tasting menus to take insome real breadth. Standout dishes include the Wagyu Scotch Egg finished with a unique turmeric aioli and the spiced and stuffed Lobster Manchurian.
