New Indian restaurants are not uncommon in Singapore, but Revolver has been setting foodie hearts ablaze since its 2021 opening with its woodfire concept, sexy Tras Street dining room (complete with chef’s table) and bold flavour combinations. Executive chef Saurabh Udinia’s menus showcase premium seasonal ingredients cooked over the custom-built tawa (iron grill), in the hand-built tandoori oven or over an open fire. It’s hardly surprising, then, that the sunken, open kitchen distracts from the much-lauded silver-and-black dining room, courtesy of Matthew Shang Design Office. For an overview of Udinia’s culinary prowess, opt for the nine-course tasting menu featuring the likes of Boston lobster swimming in garlic butter and burnished with gunpowder dust and Margra lamb chops, which are marinated in mustard oil and Indian spices before being flame-grilled and drizzled with lemon juice. For those feeling the heat, a sommelier is on hand to offer refreshing wine pairings, sake selections and cocktails.
