“Crossroads cuisine” is how Ivan Brehm describes the food he serves at Nouri, which entered Asia's 50 Best in 2019. The chef, who worked at Heston’s The Fat Duck, credits his mixed background – Italian, German, Brazilian and Spanish – for his cross-culture variations. The eclectic tasting menus feature the likes of acarajé (Afro-Brazilian fritters) laced in turmeric and coconut curry, and Italian risotto flavoured with Japanese yuzu kosho (chilli paste). A sleek communal marble table is designed to foster interaction and connection. As for the name, Nouri is rooted in the Latin word for nourishment.
