The rooftop of Singapore's National Gallery is a rather majestic location for a sundowner, with its terrace offering panoramic views across the city's shimmering skyline. Mel John Chavez oversees things here and saw the bar's placing at No.60 in Asia's 50 Best Bars 2022 under his stewardship. He offers two menus, primarily one of classic cocktails like the Sazerac, combining cognac, sugar and bitters and the Between the Sheets which mixes aged rum, cognac, orange liqueur and lemon. The second is dedicated to original creations, for example The Manhattan Project which blends bourbon, artichoke bitter, sweet vermouth, bitter Italian liqueur, butterscotch chocolate and bitters for the perfect blend of booziness, bitterness and sweetness. The bar has also recently collaborately with the museum, allowing guests to join guided tours to get up close and personal with the art that has influenced its drinks offering.
