Aspiring musician-turned chef Dae-chun Kim is behind the ambitious French-Asian cuisine at TocToc, which has evolved since its 2013 opening into a sharply focused Asia’s 50 Best powerhouse. In an unassuming dining room with warm wooden and forest green accents, guests enjoy sophisticated seafood, vegetarian and meat-based plates from one of two tasting menus (although, à la carte is also available). ‘The Signatures’ gathers the chef’s standout dishes – fried white fish wrapped in kataifi, chargrilled hanu loin – while ‘Tocnomy’ showcases Kim's ability to transform fine produce and forgotten Korean ingredients into globally inspired crowd-pleasers.
