Renowned Basque chef Diego Guerrero left Madrid institution El Club Allard in 2013 with a mission to make haute cuisine more accessible and less fussy. DSTAgE – an acronym of 'Days to Smell Taste Amaze Grow & Enjoy' – is the result. Before taking a seat, diners are led to the counter of the open kitchen that is the focal point of the courtyard-style dining room to enjoy a handful of small, ever-changing, inventive bites. Two tasting menus – of 15 or 18 courses – are available, with Guerrero and his team serving up dishes such as roasted avocado, fermented yucca and mole, and octopus with squeezed king prawn head.
