Renowned Basque chef Diego Guerrero left Madrid institution El Club Allard in 2013 with a mission to make haute cuisine more accessible and less fussy. DSTAgE – an acronym of 'Days to Smell Taste Amaze Grow & Enjoy' – is the result. Upon arrival, diners are invited to the open kitchen counter at the heart of the courtyard-style dining room, where small, ever-changing bites tease the palate and set the tone for what's to come. Three tasting menus, featuring 16, 18 or 22 courses, are designed to guide guests through a journey of textures, flavours and surprises. Dishes range from the likes of roasted avocado with fermented yucca and mole to tender octopus paired with squeezed king prawn head, each plate as refined as it is quirky. Every course is a small revelation, and the vibrant, open space allows guests to watch the artistry unfold.
