Valencia’s art-nouveau Mercado Colón is an essential architectural waypoint on any visit to the city and likewise is a booking at a restaurant led by one of the city’s leading culinary sons, Ricard Camarena. At this venue, one of his four restaurants in Valencia, he highlights the cuisine of the Mediterranean, spanning from its easternmost part to west. Dishes come with an extremely modern, stylised presentation, with notable highlights including Galician beef steak tartare, egg yolk foam and pickles; organic tomato tatin, creme fraiche and fresh herbs; and fried eggs with lobster, potatoes and sobrasada (spicy Spanish spreadable sausage). Wines are a seriously strong suit, with the majority sourced from Spanish organic producers, with a huge range by the glass.
