KLE

Zurich, Switzerland

Former software engineer Zineb “Zizi” Hattab is the woman behind district 3 vegan restaurant KLE, which opened in 2020. Its name is derived from the German “Saurklee” – a plant that has been used throughout most major civilisations for millennia. Born in Spain to Moroccan parents, the chef earned her culinary stripes working at restaurants including Massimo Bottura’s Osteria Francescana in Modena and hot-ticket Mexican Cosme in NYC. At 40-cover KLE, she sends out a three-to-five-course surprise dinner menu featuring fresh, locally sourced organic produce (with ingredients listed as “Seasonal Protagonists” on the menu). Dishes put punchy Moroccan and Mexican flavours centre stage, ably backed up by some brilliant biodynamic wines and expectation-defying desserts (this chocolate mousse is vegan?) The weekend brunch offers the likes of house-made granola, fluffy pancakes, cashew cream cheese on a warm bagel and a BBQ mushroom sandwich on sourdough worthy of a visit in itself.
