A Molteni stove encased in Carrara marble (famously Michelangelo’s favourite) sits in the middle of this luxurious dining room, setting the tone for a theatrical dining experience that redefines the phrase ‘open kitchen’. Brilliant chef Vincent Thierry’s (previously of Hong Kong’s renowned Caprice) modern French tasting menus demonstrate the fact that he considers himself a chef before artist, although bold graphic plating might tempt you to disagree. Ingredients that cannot be found locally are the best in the world – French caviar, Sottish langoustine – while as much as possible is made on site, including fist-sized pats of butter delivered to the table by Thierry himself, a pleasing gesture of Gallic hospitality.
