The photo opportunities from this crescent-shaped dining room on the 65th floor of the Lebua Hotel couldn’t help but upstage the food in most cases, but there’s no danger of that with Ryuki Kawasaki at the helm. He draws on his classical French training and Japanese roots to create precise multi-course tasting menus that allow the ingredients to speak for themselves. Some, such as his specialty wagyu beef dish, are made with ingredients that can’t be found anywhere else in the world outside their home country (in this case a rare breed of cow from Kawasaki's hometown in Japan’s Miigata Prefecture).
