In Bangkok’s ever-competitive restaurant scene, you have to go some to stand out. And that’s exactly what Swiss chef and fine-dining heavyweight Andreas Caminada has done. Set in the St Regis hotel, Igniv Bangkok is his first foray off home turf. A verdant, welcoming dining room picks up on the concept of nesting – a Romansh translation of the restaurant’s moniker – evoking a sense of home comfort from the get go. Under Caminada’s right-hand man, David Hartwig, the menu maintains its European DNA, but dishes – designed to be shared – are lifted to complement the tropical climes. Accents come by way of local ingredients from small producers and twists on traditional Thai food culture. There’s a pretty playfulness to plating across the likes of lettuce and chilli sauce, smoky chicken nuggets, foie gras with jackfruit and shaved ice. And things are rounded off with a trolley laden with sweet somethings – chewy mini canalé, shards of homemade chocolate, fruit jellies et al. – to be packaged up to take home.
