There are two things that award-winning Edinburgh bar Hey Palu is best known for: its contemporary takes on Italian cocktails and its faultless tunes. Located in the Scottish capital’s Old Town, the drinks here draw on the Italian culture of the aperitivo – one of the bar’s owners is from the Amalfi coast, after all – but bring them firmly into the modern day. Try the Negroni flights, featuring the classic made with the bar’s own rosso vermouth, alongside two inventive twists. There’s an extensive list of classics too, all reinterpreted in a subtly new way. The back bar is home to dozens of amari – Italy’s bittersweet liqueurs – with wines and snacks also drawing on the country’s bounty.
