Accomplished elegance is an easy summation of Alex Dilling’s eponymous restaurant at the Soho-gazing Hotel Café Royal. In a softly lit, esoteric dining space (think fawn-coloured upholstery, mirrored ceilings and gossamer curtains hiding the bustle of London’s Regent Street below), the British chef – who previously worked under Alain Ducasse and Hélène Darroze – plates modern interpretations of classical French fare. Dishes are recognisable but transformed; for example, the multi-layered iteration of pâte de campagne comprises Ibérico pork, foie gras and a set mushroom consommé. With only 34 seats, expect an intimate dining experience. Diners choose between a five and seven-course tasting menu, both of which are bookended by canapés and petit fours. A lunchtime three course menu is also available. The wine list is notable for its prices (most bottles don’t dip below $74) but, in a restaurant where solo diners should note the $483 minimum spend per table, hardly unexpected.
