While it is notoriously difficult to secure a table at Sushi Tetsu – bookings may only be made over the phone, on certain days, at specific times – for lovers of authentic sushi and sashimi, the rewards justify the effort. Run by husband-and-wife team Harumi and Toru Takahashi – the latter nicknamed ‘Tetsu’ when an apprentice in Kobe – à la carte and set menus comprise whatever the chef deems freshest and best that day. A highlight is watching the open kitchen, where Takahashi slices and splices the likes of sea urchin, turbot, tuna and scallops with well-practised efficiency.
