Obsessive attention to detail is the name of the game at this exclusive nine-seater restaurant in Mayfair. The sushi master behind it all, Mitsuhiro Araki, handed over the reins to his long-time deputy, Marty Lau, in 2019, yet his exacting standards remain. There are just two sittings a night at the 200-year-old cypress wood counter, and there's only one set omakase menu, which will likely be enjoyed primarily for special occasions. Note there is also little ability to accommodate dietary requirements. Everything is just so, from the bespoke tableware to the unique sake glasses and the rice, which is still sourced from Araki's father-in-law's farm back in Japan. It's a truly singular London dining experience, where soups, sashimi and barely cooked seafood dishes are presented with the quiet precision and grace of Japan's sadō (tea-ceremony) tradition.
