A dining room this resplendent couldn't help but upstage the food in most cases. Not so with executive chef John Williams MBE at the helm. Of course, grand Louis XVI furnishings, frescoed ceilings and curtains that look as if they're spun from pure gold are eye-catching, but it's Williams' Escoffier-inspired interpretations of quality British ingredients that will linger on in the memory long after the last course has been served. Native lobster arrives in a fragrant lemon verbena sauce, chestnut-fed pigeon is accessorised with wild mushroom and lovage, and a dessert of crepes suzette is prepared with poise (and a soupçon of theatre) at your table. The wine list leans on classic regions – Champagne, Bordeaux, Burgundy, Piedmont and Tuscany – while considered by-the-glass options and lesser-known bottles allow diners to tailor pairings to each course.
