Award-winning pitmaster Aaron Franklin started out with a food trailer selling brisket. Today he runs Franklin Barbecue with his wife Stacy, one of Texas's finest and most popular barbecue purveyors. Retaining the open-until-it's-gone philosophy in the bricks-and-mortar establishment, pork and beef form the naturally protein-heavy menu. Order ribs, the famous brisket or sausage by the pound and add classic sides such as slaw, potato salad and pinto beans; pulled pork and turkey sandwiches are also on the menu. If you've room, there are pies for pudding – pecan, key lime, bourbon banana or the Ruby's Dang Pie, a coconut and pineapple homage to a former Austin bbq joint the owners used to frequent.
