Over the years, a series of Chicago restaurants have called the 19th-century printing warehouse on West Huron Street home; the latest is Indienne. The cavernous 85-seat dining room, bar and private dining room is pleasing on the eye, all stripped-back architectural detailing, pendant lighting and dusty rose banquettes. There’s a quartet of tasting menus to choose from (vegetarian/veganon-vegetarian/pescatarian), each one a lesson in originality. Pani puri are filled with passion fruit, green apple and buckwheat; yoghurt chaat is layered with strawberry, mint and tamarind; medu vada come with butternut squash and tomato pachadi; sea bass curry and fragrant butter chicken sing with flavour. Not feeling the full 10 courses and wine pairing? Bar snacks are innovative: avocado bhel with ember-roasted pork; cauliflower koliwada; green pea and fava flatbreads; and barbecue pork belly with pomegranate are best enjoyed with a pickled mango gin cocktail.
