Splitting her pastas into tipica and atipica, Chef draws from both the classics and her travels to offer an all-encompassing, all-exciting offering. One one hand, there’s exemplary spaghetti al pomodoro, on the other, potato-filled Slovenian-style dumplings, zlikrofi, with brown butter, honey and truffle. Mozzarella shooters with tomato dashi and an optional caviar bump speak to modern times, while meatballs and Alpine sausage with fontina and black garlic speaks to comfort food favourites. Either way you go you can expect a dreamy iteration of Italian fare on the plate.
