The kitchen deserves praise for its elevated takes on the classics. See French onion soup with short rib and Périgord truffle, escargots glistening with absinthe butter, and a life-changing roast chicken prepared akin to Peking duck. Steak with duck fat fries, heritage pork chop, truffle whipped potato and a stellar cheeseboard demand you bring your appetite A-game.
