His playground of flavour centres around prized ingredients like abalone and dried scallops, while modern inspiration comes by way of luxurious Iberico pork char siu, beef fried rice with black truffle and the addition of foie gras to a typical corn soup. The king crab spring rolls with sliced avocado and a piquant aioli sauce and the lemongrass imbued lobster stir-fry are signature dishes for a reason.
