This Chicago export, from ex The French Laundry chef-cum-restaurateur Brendan Sodikoff, makes a confident departure from Vegas' old-school style steakhouses. Housed in the Strip's Park MGM resort in a sultry labyrinthine den of rooms-within-rooms, Bavette's reputation for sensational USDA prime beef precedes it. Here, the convivial crowd is as serious about good food as it is about having a good time. Expect blushing 42-day dry-aged ribeyes, roasted bone marrow with red onion jam and double wagyu cheeseburgers served with all the extras. It's certainly not a menu for the faint-hearted, bolstered by towering seafood platters, huge salads and brasserie-style dishes of stroganoff and lobster frites. A jazzy soundtrack and Belle Epoque interiors hold it together, while a speakeasy bar completes the look.
