Its easy-to-miss façade on a Chinatown strip mall gives little away, but with Kabuto's address in your back pocket, you'll look like a Vegas insider. When it comes to the interiors, blink twice and you could easily be in Tokyo. With sparse design and a clean, succinct menu, the itamae at this Japanese sushi bar shows pure reverence to tradition and ingredients. In-the-know gourmands make up the crowd. Expect two elegant omakase menus, which change daily, served at a Hinoki-tree counter, the whole experience taking around two hours. Subtle, nuanced flavours lead in the likes of black snapper, jack mackerel and deep-sea porgy nigiri and sashimi straight from the Bay of Tokyo. Artisan shoyu and a strong saké list follow suit, the latter served in glasses imported from Japan that are said to give an extra smooth after taste.
