It was long a dream of Australian siblings Curtis and Luke Stone to fuse together an old-world butcher with a fine-dining restaurant, one that they've since realised in the heart of Hollywood. Gwen is named after their grandmother, on whose Melbourne farm the brothers were first exposed to cattle farming, giving them an innate understanding of raising animals for food. Dealing in locally-sourced premium cuts, order a la carte or chef Curtis' 'Carte Blanche' five-course menu. Bone-in rib-eye is aged for 30 days, best enjoyed with a side of beef fat shallots; the butchery team also prepares fermented, air-dried and cooked charcuterie in-house. Though this is a menu that will wow carnivores, there's seafood too. Most proteins are available to take home from the butcher's shop, all hormone-free and ethically raised.
