Majordomo is New York-based chef David Chang's first – and long-awaited – foray into the West Coast. It is, in many ways, an amalgam of his previous concepts and inspirations. The opening section of the menu is dedicated to bing (China's answer to the flatbread or roti), which becomes the vehicle for toppings ranging from chickpea hozon (similar to miso) to slices of smoky country ham from Virginia. Sharing is encouraged to best experience the varied à la carte menu, punctuated by family sized main courses such as steamed whole fish or a massive, bone-in ribeye steak.
