Majordomo was New York-based chef and restaurateur David Chang's first - and long-awaited - foray into the West Coast. It is, in many ways, an amalgam of his previous concepts and inspirations. The opening section of the menu is dedicated to bing (China's answer to the flatbread or roti), which becomes the vehicle for toppings ranging from chickpea and sesame to eggplant and pine nut gremolata. There are salad, snacks, noodles and rice options, as well. Sharing is encouraged to best experience the varied à la carte menu, with large-format, family-sized dishes such as a boiled chicken served with domojang and ginger scallion or a massive whole plate of short rib with all the condiments and beef rice (pre-ordering the latter is a must). The weeknight prix fixe menu is three courses and the whole table must participate.
