The culinary world is always in flux, as chef Aitor Zabala discovered when he was forced to close his Beverly Hills restaurant Somni in 2020 due to the pressures of the pandemic. But with one ending comes another beginning, and now a newly reimagined version – informally called Somni 2.0 – provides a more sharply honed expression of the concept in West Hollywood. Here boundaries are broken, craft is hyper-focused and the flavours of Basque Country and Catalonia are expressed through the rainbow of California produce. Gaudi-inspired panot tiles and a tree-dotted terrace welcome diners into the Mediterranean-leaning space – warm, coddling and embracing an indoor-outdoor flow. Settle in for the 14-seater chef’s counter, an evening-long experience with just one seating per day, where Zabala’s craft can be witnessed up close.
