Cane and Table
New Orleans, US
Coupling Cuban flavours from chef Alfredo Nogueira with New Orleans food and drink culture, Cane and Table self-defines as ‘proto-tiki’ – that is, sourcing its tropical influences from before the 20th-century American-induced mass wave of heavily garnished, somewhat garish mai tais and hurricanes. A selection of daiquiris – House, Belize, New Orleans and Barbados – deliver freshness and flavour through the minute, expert adjustment of sugar and citrus, and a perfectly chosen rum centrepiece. The daily happy hour between 5pm and 7pm is the perfect excuse to get in early before graduating to the onsite restaurant, serving dishes such as Jamaican fish rundown or crispy baked pork ribeye with yucca hash, avocado, tomato, cucumber and mojo verde. They do, of course, still do mai tais but in their own way; and each one can be made big enough to serve four people.
