In 2021, the LeBlanc + Smith group (Barrel Proof, Sylvain, The Chloe) opened The Will & The Way in the former Longway Tavern space on Toulouse Street in an attempt to reclaim the local vibes of the tourist-centric French Quarter Neighborhood. The beautiful 18th-century building – complete with classic Quarter courtyard – serves as a warm backdrop for the hip contemporary bar, where cocktails and a clever wine list provide plenty of options to keep guests satisfied. The house Sazerac, made with armagnac, is a magnificent iteration of the classic, and a rotating frozen drink pays homage to the neon slushy machines of nearby Bourbon Street. A menu featuring bar snacks, charcuterie, and larger plates including burgers, is available to help balance out the booze. From start to finish, the bar is a memorable departure from the status quo in this bustling part of New Orleans.
