Corima takes its name from the Mexican idea of a "circle of sharing", a philosophy that places collective ownership over individual possession. It's a concept that mirrors chef‑patron Fide Caballero's connection to his roots in the Chihuahuan desert, and underpins his mission to bring the flavours of northern Mexico to New York. Dishes take on the flavours of Rio Grande cities Ciudad Juárez and El Paso, with global influences from Asia to Europe. The menu highlights Northern Mexican ingredients and techniques with inventive precision: razor clams in shrimp consommé finished with kimchi ice or a grilled chicken tamale scented with fresh sansho. Even the wheat tortillas, served with charred chile butter, are made with sourdough. Set in a rustic Lower East Side space of exposed brick, clean lines and warm wood, Corima has a lively front bar and a rear dining room with an intimate chef's counter overlooking the open kitchen. Drinks follow the same ethos, pairing agave spirits with refreshing, fruit‑forward cocktails.
