Amanda Cohen puts plants and sustainability first on her seasonally changing five-course tasting menu. Vegetables are king, taking centre stage in what is essentially chef Amanda's laboratory. Enjoy her brightly coloured, complex yet seemingly simple, dishes such as Brussel sprout tacos and Chinese-style smoked cabbage hot pot – which have both been designed to share. Other plates could include spinach mille-feuille, fennel mousse or an artichoke and mozzarella stuffed pasta. Inventive, creative, bold and flavourful are terms used to describe the concoctions. Try a savoury cocktail such as the Safflower (rum, yellow bell pepper, saffron liqueur, Ancho Reyes and lime) or a mezcal-cucumber-yuzu Kyuri to go along with the food. The wine list only comprises vintages produced by women. Of note: Dirt Candy was New York's first restaurant to share profits with employees and ditch tips.
