When Cote opened in 2017, restaurateur Simon Kim turned the American steakhouse paradigm on its head by remixing the genre together with Korean barbecue traditions. Chef David Shim has since made the buzzy restaurant one of the hottest dining tickets in NYC thanks to a spectacular array of USDA Prime beef cuts, a deep champagne collection, and other highlights such as the 28-sq.m dry aging room where steaks rest in Himalayan sea salt. The menu features many hallmarks of the stateside genre, including wedge salad, shrimp cocktail and steak tartare, but the reserve cuts and savoury sides (such as Dol-sot Bibimbop, kimchi wagyu paella and Jan-chi Somyun) are where things get really exciting. The butcher's prix-fixe is one of the best deals of the house: the tasting menu includes four cuts of meat with a spring onion salad, savoury egg soufflé, two stews with rice, among other dishes, and ends with vanilla soft serve drizzled with a soy sauce caramel. The somewhat moody, upscale, dramatically lit space is a departure from the expected –dress up and make it a night out on the town.
