After spending eight years at pioneering NYC cocktail bar Angel's Share, Tokyo native Takuma Watanabe opened his first solo project, a three-level Japanese-style bar in Gramercy in early 2022. The name of the bar – yes, it is pronounced like the cocktail – comes from one of the building's most notable tenants: the space was a carriage house in the 1800s before housing an artist named Philip Martiny, the sculptor who created the Washington Square arch. With ten cocktails on the list, some drinks weave in ingredients from Japan like Nikka whisky and matcha, while others are Watanabe's takes on classics, like the Martini (appropriately enough). From the glassware to the soft jazz, the on-point techniques and design details, every element showcases Watanabe's meticulous skills and eye for beauty while also paying homage to the storied bars of Tokyo's classic Ginza neighborhood.
