After meeting at acclaimed New York sushi restaurant Masa, chefs Nick Kim and Jimmy Lau teamed up to open Shuko in Union Square. They offer two tasting menus: a pure sushi and sashimi omakase and a more expensive multi-course kaiseki menu with composed dishes, such as toro tartare topped with Oscietra caviar, in addition to sushi. Each has an optional wine and sake pairing. Meals are served around the 20-seat sushi bar to a hip-hop soundtrack. And there’s an apple pie dessert, making Shuko a rebellious twist on the average Tokyo counter restaurant.
