Known primarily for its exceptional natural wine offering and French-inspired seafood, Seattle's L'Oursin (which translates as The Sea Urchin) also happens to have an excellent under-the-radar cocktail programme worth checking out. The list is small but mighty, and infused with plenty of personality, primarily highlighting European ingredients (think armagnac, sherry, poire eau de vie, calvados, rancio sex, chartreuse and more). Presented via a transit map of Paris, with stories behind each of the drink names, the menu is a fun and educational way to bring the libations to life, and includes a small collection of sans-alcohol options to keep things inclusive. For sipping, the bar offers more than 60 brandies largely from small and independent French producers, featuring both aged and unaged versions of the country's most iconic spirit.
