The restaurant is housed on the first floor of a turn-of-the-century brick building, its minimal dining room forever humming with DC's well-heeled bon vivants. They're here for Eric Ziebold, formerly of Thomas Keller's lauded The French Laundry and Per Se, and his nostalgia-laced cooking. The dinner menu is divided into subsections: Craft (dishes that celebrate a cooking technique, such as hay-smoked tuna niçoise); History (classics revisited like lamb navarin or asparagus vinaigrette); Ingredients (a celebration of a specific product); Indulgence (highlights might include caviar, lobster French toast and double chocolate mousse); and For the Table, where the likes of roast chicken or leg of lamb are for sharing. Métier, located on a different floor with a window into the kitchen, can be transformed into a private dining space. After dinner, sink into a dusky velvet sofa for a digestif beside the open fire in the lounge.
