To dine at Minibar is to leave one's expectations at the door. José Andrés’ playful style keeps guests on the edge of their seats, wondering what's around the next turn of his tasting menu. Andrés is one of mega-chef Ferran Adrià's most famous acolytes. And the spirit of El Bulli lives on here in DC. Modernist techniques, such as spherification and foams, skilfully tiptoe the line between cooking and science, resulting in delightfully wacky textures and taste experiences. Past highlights, that have reappeared on menus since, include wagyu with a beef consommé sphere that you would swear is in fact a perfect egg yolk (spherification), made so diners can dip their beef into the consommé. A beetroot butterfly with Greek yogurt, mandarin orange, and marigold flowers is so beautiful as to be almost too heartbreaking to eat. With seating for 12, this is intimate dining indeed with a high dose of personal attention that is all part of the experience.
