Perhaps it's the fact that there's no decoration and each of the sixteen chairs faces the kitchen, leaving diners in no doubt about where the focus lies: on a whimsical 15-course tasting menu consisting of some of the rarest and most luxurious ingredients in the world. Sure, you’re familiar with Wagyu beef and foie gras (which appears here in the form of jelly donuts), but how about rare kaluga caviar, Miyazagi mango and hard-to-find ishidai fish, whose delicate sweetness pairs wonderfully with buttermilk? The top-tier menu draws both serious foodies and those who don’t mind dropping $650 on premium wine pairings. Is spending that kind of cash on a single meal worth it? The fact that it’s so difficult to snag a seat would imply that it is.
