Third-generation Chinese-Canadian chef Kelvin Cheung has seen the world many times over. He worked across North America, Hong Kong and India before recently landing in Dubai to open this, his flagship restaurant. At Jun’s, Cheung borrows from his globetrotting past to create a menu that takes fusion to the next level. Almost every dish here blurs the boundaries between cuisines, finding common ground between the usually unfamiliar. Think Persian-inspired lamb koobideh (ground meat kebabs) fused with Japanese tsukune (meatballs), or tempura za’atar chaat, where the east-Asian batter hosts a balanced concoction of Middle Eastern and Indian spices. Cheung’s creations are wild but well-considered, often presented at the table by the chef himself to explain the dish and the thought processes behind it.
