Since it opened its doors in late 2021, Moonrise has been the talk of the town offering high-art cuisine to just eight guests at a time. Created by a home-grown Dubai talent, chef Solemann Haddad uses Moonrise to represent the story of his hometown through food. And, at just 26 years old, he’s already considered one of the city’s best chefs in a location known for being the culinary playground of global gastronomic giants. Food is served omakase-style and each diner has front-row seats to witness the creation of his dishes that blend Japanese technique with Middle Eastern produce and flavours. Cured slices of hamachi come topped with a Syrian sumac sauce and preserved lemon. A khoory kabab, utilising A5 wagyu beef reared in Jordan with celeriac, beef jus and a shiso bouquet epitomises Haddad’s fusionist philosophy. Wherever possible, Moonrise sources locally from within the Middle East, only shipping in specialist produce where absolutely necessary. Its setting is just as special as its food, too, sat atop a residential building illuminated by the glow of Dubai’s skyline. Book at least two months in advance.
