Ross Shonhan comes to Dubai by way of Queensland, London and Dallas where, not only did he work in big-name restaurants, he also started his own, including the ramen bar chain Bone Daddies and Japanese izakaya-style Flesh & Buns. In 2019, he opened Netsu by Ross Shonhan, his first establishment in the UAE (he also has Strawfire by Ross Shonhan in Abu Dhabi), which pivots around the Japanese technique of warayaki. Steak is a huge draw, with cuts of Japanese and Australian wagyu available by weight and cooked over the straw-fired grill (said to be the largest outside Japan), giving them a distinct smoky flavour. It's certainly dramatic, watching the metres-high flames in the glass-framed kitchen. There’s much more on the menu besides, including sushi and sashimi, tableside temaki, soups and noodles. If you have room, the desserts on dry ice have the wow factor. The wine list is extensive, and there’s even a dedicated sake sommelier.
