A past regular in Latin America’s 50 Best Restaurants list, Alto is the home of chef Carlos García’s creative cuisine using local Venezuelan ingredients. Dishes might include mandarin and guava ceviche, octopus a la criolla, mini arepas with white fish and suckling pig served with dauphinoise-style layers of yucca and bacon. Cacao is a popular ingredient at Alto and is used in everything from salads to the intensely chocolatey Tierra de Cacao plant-pot dessert. García, who won the 50 Best Chefs' Choice Award in 2018, is behind a charity in crisis-hit Caracas to feed the city’s hungry in hospitals, care homes, schools and other institutions.
