Tung Dining (named after the chef. but also doubling for ‘Twisted, unique, natural and gastronomique’) has caused a furore in Hanoi, with its seasonal 18-course dinners gaining industry recognition in the form of a spot on Asia’s 50 Best Restaurants 2021 list of venues ranked between 51 and 100. Open since December 2018, the 33-cover dining room provides a stylish backdrop for chef-patron Hoang Tung’s playful, boundary-pushing plates. Omitting butter and cream in favour of unexpected ingredients like fermented juices, yoghurt and gin, Tung – who earned his stripes at various Michelin-starred restaurants in Scandinavia – makes even basic-sounding sides such as steamed rice and corn surprise and delight. Envelope of Happiness, his latest menu, features the likes of trout, eel, foie gras, pigeon, marshmallow and peach. Beer, juice and wine pairings are available to take all the decision-making out of your hands.
