Set within a former architect's studio, this radically minimal cocktail bar carries its heritage in its bones – built on the site of a Lý Dynasty palace in what was once a craft village, its warm wood-clad interior is designed as an ode to preservation. Sweeping windows and foliage indoors blur the line between the bar and the zen-like garden. Made up of just 12 drinks, the menu reflects the same spirit of restraint, while evolving seasonally and drawing on a rigorous R&D programme. Plum Intended pays homage to Vietnam's agricultural roots, combining grassy rum with bright Moc Chau plum and complex shiso into something jewel-hued and quietly arresting. The Barry Galdi reveals the in-house lab's technical finesse: fruit is juiced, then pushed through a rotor-stator homogeniser that grinds it to five microns, producing a silky texture to combine seamlessly with Campari and mezcal.
