Renowned chef Héctor Solís serves up fresh seafood at this casual lunch joint in a rustic wooden house. Inspired by the Arequipa region’s picantería restaurants, diners select a fish from the daily catch (priced per kilo) and decide how they want it prepared, with help from kitchen staff: ceviche to start, grilled and served with a bright, buttery citrus sauce, added to a rich sudado stew, or as a flavourful chilcano broth made from the bones. The menu is limited, so arrive early to avoid disappointment.

La Picantería joins Solís’ Chiclayo-style Fiesta restaurant on the list. In a career spanning 20 years, the chef has consistently sought to pay homage to his northern Peruvian home, showcasing all facets of the region’s vibrant, diverse cuisine.
