The Orfali brothers' sweeter side

The culinary world is full of family stories. In Spain, there's the Roca and the Adria families; in the USA, there's the Lagasse father-son duo; in France, there's the Troisgros dynasty; and in the Middle East, there's the Orfali brothers.

Big brother Mohamad handles the savoury dishes, taking a border-hopping approach and utilising flavours and techniques from across the globe. On the sweet side, run by younger brothers Wassim and Omar, things are every bit as interesting.

With a strong background in French patisserie, the brothers use this rigorous understanding of technique as a jumping off point to explore diverse inspirations and flavour profiles. Dessert menus are seasonal, but highlights include the mandarin and vanilla rice pudding with almond cake and vanilla shortbread, presented to look like an ultra-glossy, just-picked mandarin; and the pistachio bomb.

Over at the brothers' latest opening, Three Bros, the maxim of 'minimum fuss, maximum flavour' informs the desserts as much as the rest of the menu. Here, the sweet offering is notably light-hearted but no less delicious. Undoubtedly, the standout is the playful sando cake with peanut butter crémeux and raspberry jam.

The brothers have won their fair share of accolades, with Orfali Bros named The Best Restaurant in the Middle East & North Africa in 2023, 2024 and 2025. Through their series of masterclasses, the brothers have also helped cultivate the next generation of Dubai-based chefs.
