Chez Wam

On the Pass

Hadrien Villedieu

Come on over: With a French slang name that translates into English as 'at mine', Chez Wam nails its colours to the mast from the get-go. Channelling the atmosphere of a hip house party, it's a space for friends, family, good times and conviviality, all underscored by a menu of contemporary cuisine that knows how to have fun – and set to the beat of a chilled-out disco playlist.

French chef, global flavours: Heading up this happening affair is chef Hadrien Villedieu, whose resumé includes stints working under culinary icons Alain Passard, Jean Pierre Vigato and the late Joël Robuchon. His vision? To bring people together over mouth-watering food and drinks inspired by his travels abroad, so expect an avant-garde mix of modern French technique and exciting international influences.

Menu highlights: Must-try a la carte options include wagyu boeuf tartare and foie gras bao buns, followed by Hokkaido scallops, truffle gorgonzola gnocchi and slow-cooked beef short rib wrapped in lettuce and papaya. If you really want to ramp up the revelry, plump for a platter of tomahawk steak or herb butter–doused lamb rack with panko onions – if ever there was a place to share in the moment, it's here.

A guided tour: Inspired by a French carnet de voyage, or 'travel diary', Chez Wam's Chef's Table experience – which accommodates just one seating every Tuesday, with a maximum of six guests – takes diners on an interactive culinary journey, no passport required. Conducted at an intimate counter overlooking the open kitchen, this curated tasting session showcases the restaurant's most expressive dishes.
