Named for the part of Vietnam that was once a French colony, CoChinChina takes its inspiration from both of these cultures. Inés De Los Santos teamed up with acclaimed restaurant designer Eme Carranza to create the sumptuous yet fun interior, with its various references to Vietnam, and various unique spaces to explore, including a hidden private room. Chef Juan Carlino was called in to create a menu of Franco-Vietnamese dishes – think wonton-wrapped prawns and banh-mi. But it’s de los Santos’ cocktail creations that are the real star of the show here. The menu is divided between drinks specifically created for CoChinChina, and “Clásicos de Inés”. The former list includes creations such as the Se-Sa-Hattan, with a blend of whiskies and vermouths, joined by sesame oil and banana oleo.
