La Carnicería

Buenos Aires, Argentina

Meaning ‘butcher’s shop’ in Spanish, La Carnicería is a carnivore’s paradise from Germán Sitz and Pedro Peña, the chef-owners behind nearby Asian grill Niño Gordo. Taking the classic Argentine parrilla steakhouse and turning it on its head, this tiny restaurant puts its own twist on some of the classics, adding pear and greens to grilled provoleta cheese and putting the ‘sweet’ into sweetbreads (mollejas) with the genius addition of honey, corn and black garlic – legendary US restaurateur Danny Meyer calls them ‘the most delicious I’ve ever eaten’. Because of its size, it quickly becomes packed, so book ahead and prepare for buzzing noise levels. Start with a lemon verbena or cucumber and black mint G&T and move on to a bottle of local wine.
