But wine is the main focus, with an extensive list divided by style and including some more esoteric drops – sections are dedicated to macerated whites and orange wines from the Adelaide Hills to Umbria, as well as chilled reds. You can even sign up for champagne sabrage (the art of opening a bottle of sparkling wine) lessons. The small-but-perfectly-formed cocktail selection is suitably kooky; a Japanese Slipper No. Blue, for example, features blue curacao, gin, yuzu and melon. Meanwhile the sophisticated food menu – moving from Sydney rock oysters with wakame and chardonnay vinegar to whole blue mackerel with nettle and lemon – should not be overlooked.
