Follow the sweet sound of Champagne corks popping to Nuance, in the town of Duffel, near Antwerp. The town's name, as you may havey deduced, is also of note for being the place where they invented the cloth used to make the eponymous coat. Housed in a former bank, the 42-cover restaurant sees Thierry Theys – ex-Plaza Athénée, Paris, and Monaco’s Beefbar – at the stove, his wife, Sofie Willemarck, running the crisply elegant dining room. Elaborate tasting menus play with extractions, infusions and oils to elevate the likes of sardines, langoustine and sea bass, while the formula of 300-label cellar plus award-winning sommelier makes for spot-on pairings.
